There’s this huge industry called “insurance” that employs a lot of actuaries. I can’t see why people would stop insuring their lives & property in the absence of fiat money, so they’d still have jobs.
And economists, too, very few of whom work for the BLS/NBER etc. Most of them are modellers, forecasters, analysts, etc. Those needs will still exist.
…But even if they didn’t, who cares? That’s like asking, “If David Z invented the Universal Panacea, what would Doctors and Nurses do for a living?” The services they currently perform, no longer valuable, they’d do something else.
