Microwaves - Safe?

It was recently brought to my attention, that while we take microwaves for granted in the US, they are considered to be a health hazard in many parts of Europe. For example, Russia has banned them. Alarmists cite formation of free radicals and leeching of dangerous chemicals from cookware. Studies purport to show loss of brain function and immunodeficiency.

Then the FDA says its okay, asserting that microwaves just make water molecules vibrate, and there is nothing harmful about that. I’m inclined to agree.

Does anyone have any non-biased material on this? Should I take pascal’s wager and just cook everything without a microwave?

(p.s., steel cut oats are the best thing since liquid egg whites)

As a European I’ve never ever heard about Micro waves being a health hazard. So it’s not ‘that’ big of an issue here.

I stopped using microwaves many years ago.

I mean, the food comes out like absolute shit in comparison to the more conventional cooking methods.

If that’s true, that is absolutely terrible. For the most part I try to stay away from cooking solid foods in the microwave, but it’s really the only easy way to heat up liquid.

I don’t know if you’d happen to know anyone with a subscription to the New England Journal of Medicine, but they published an article on this here. And here is another supplemental type of hazard.

I am as certain that microwave ovens are harmless as modern physics allows one to be…because I know how they work, as much as modern physics has determined.

First, it’s silly to confuse microwave “radiation” with bad, atomic “radiation” that causes mutations, et cetera…they are two unrelated things. Microwaves, like the light and television signals filling the air around you, are actually WAVES, as the name implies. Bad “radiation” is comprised of particles, that can hit the atoms in your body and impart energy to them, harming you. Waves simply can’t do that.

But even fear of the bad, particle radiation hitting your food is misplaced. When they sterilize food with the harmful radiation, it’s not in a way that allows radiation to be “picked up”, so the food is not radioactive afterward. And, incidentally, the same is doubly true of food in a microwave oven.

What microwave ovens actually do is present waves that are a frequency somewhat near the natural harmonic for water. This causes the water (and other) molecules in the food to be flipped upside down and back, as the waves pass through them.

THAT IS ALL IT DOES.

The atoms are flipped upside down, then back. How, precisely, is that going to cause any harm, other than the energy it imparts, that manifests as heat?

See, many kinds of atoms in food, especially in water, have magnetic poles. They are “dielectric”. As the waves pass them, the magnetic polarity of the wave aligns the atom’s poles with it. As the wave goes up and down, it flips the atom up and down. That flipping is energy the atom keeps as momentum…as the movement we call “heat”.

This simple moving of atoms can’t possibly make food radioactive, other than in the sense that heat is radiation.

So you’re not going to have any more loss of nutrition, or any radioactivity, or anything else, any more than by using a conventional oven, convection oven, boiling, et cetera.

Note that the junk science article someone linked to cites a study that did not follow even the basic scientific method. They did not propose a way that microwave energy would make food less nutritious, then carry out a test pretty certain to prove that way false, if it’s false. Instead, they just fed stuff to people and tried to measure the results, without any way of determining what actual factors caused any results they found.

For example, was the microwaved food less tasty? Maybe the actual scientific evidence here is that the stress of eating yucky food causes…what did they call it? Oh yeah…degeneration in humans. Not the simple flipping of poles by waves that are much akin to light.

I want to know what is not considered a hazard by eurocrats.

Indeed, I think heating up water on the stove is easier, because it’s faster and otherwise the same difference. Well, except my microwave oven has a sensor…it can boil the water and then shut off, so I don’t have to stay nearby and watch.

On the other hand, MANY things taste as good or better when heated in the microwave oven. The ability to cook vegetables without diluting their flavor with water, for example, is wonderful, and way easier than steaming them, which still dilutes the taste a tiny bit more.

And microwave popcorn. It actually takes a lot of work to make popcorn that tastes better, any other way. Microwave popcorn was the Killer App of the microwave oven.

Oh, and corn on the cob! The only way to make it taste better is on a barbeque grill. Rub butter all over the corn before cooking, wrap it in wax paper or plastic wrap, and nuke.

And while a baked potato tastes nearly the same either way, it’s FAR easier and quicker in the microwave oven, plus it cooks more evenly. I hate the little tough spots you get in the typical oven-baked potato. Sure, it can be done perfectly in the conventional oven, but again that’s harder to do, just to get equivalent results to the easy way in the microwave oven.

Oh, and let’s not forget that modern “TV dinners” are a thousand times better than they were when the typical technophobe decided they hated microwave ovens, years ago. Some of the nice ones really do taste better than most things that most people are able to cook from scratch, and yet are easy to heat up.

If I’m heating up water to use for a big meal or something, then I use the stove. But usually, when I use the microwave for heating up liquid, it’s for tea or something similar, so the water is already in the cup. I live in a college house with a bunch of other guys, so all of the stove things are always dirty and need to be cleaned before use, so that might be why I consider it taking a long time.

It has a simple heating element and shuts off when it’s ready. It’s a lot easier than using the stove, and because you only use it for water it doesn’t require cleaning.

I’ve personally not used the microwave for water but I’ve just not thought about that really. I hear that you have to put a wooden spoon in it to prevent a heat buildup or something?

And yeah, I’m in Holland and I’ve never heard of a microwave scare in my life from people/culture here.

Umm. There’s no difference between “waves” and “particles” in reality, and exposure to high-energy EM radiation is worse for you than low-energy heavy particle radiation (e.g., alpha, which won’t get through your skin, as long the emitter stays outside your body). The whole point of a microwave oven is to impart energy to whatever’s inside it: that why it cooks! (It’s supposed to be shielded so it won’t cook anybody standing outside, though)

“Kettle” is the English word you’re looking for.

Probably not. If you use a smooth vessel, it’s possible to heat the water without bubbles forming, in which case it can get slightly above the boiling point without actually boiling; then it will boil off violently when something breaks the surface tension (so a spoon or something will prevent it), but it’s not very likely unless you set it up deliberately.

Kaz, they mention damaging nutrients. I think the OP got the info from a mercola article. It sounds reasonable.

Microwaves, to my knowledge, are far more efficient for heating liquids than either type of stove, gas or electric. Also, if you’re only having one cup of tea, or heating up a bowl of soup or leftover chili or something, it’s much, much easier and requires fewer vessels and utensils to be cleaned.

A lot of people poo-poo microwaves because they associate them with TV dinners and crappy food. But they’re actually quite useful for a variety of tasks.

Next to my computer, my microwave oven is the most used appliance.

It sounds inductively reason-able.

But it’s not sound, deductive reasoning at all.

The effect of microwave oven-frequency microwaves on oxygen, hydrogen, carbon, and certain other elements is to flip them back and forth with the wave’s passing, because they have dielectric polarity. This simply makes them warmer, because motion=heat as far as atoms are concerned.

There is no way for this to “damage nutrients”, which are molecules, any more than any other source of heat. In fact, it “damages” them LESS than other sources, because it introduces the heat in a more pristine fashion: there is not super-heating at the point of contact, the heat is not being transmitted by another material via conduction, et cetera.

This is why there is actually some study being done of microwave ovens preserving more nutrients than conventional cooking.

Kaz, the analytical reason why it might cause a different type of reaction is because certain elements are affected primarily by microwaves. Their energy will always be greater than the secondary molecules, who only gain heat via conduction. So the asymmetric heating alone is enough to cause concern. Additionally, the heating of primary molecules is qualitatively different than normal heating, so some reactions may ocurr under polarized “flipping” that would not ocurr in an unpolarized conductive environment.
